Highly recommend red lentil sweet potato curry with spinach from New York Times cooking (which sounds like it may be worth a subscription for you). I add tofu sometimes for protein and serve over rice

To add to Matthew’s comment, my SO and I use NYT cooking recipes for ~80% of our meal planning. Their app is great, and honestly, you can find the annual subscription for a steal most of the time. It really has made meal planning so much easier than what we were doing before

Great article! I have found that doing some prep so I always have a few staples ready to go reduces my ability to just "phone in" meals shall we say (an apple and a protein bar are not a lunch, for example). A big batch of rice in the Instant Pot, roasted veggies or a big saute I can pull out and microwave is the key! Thanks for sharing this!

There is a beautiful meal my wife actually makes when I am feeling down or need that something something I’ve been missing in food. Basically it is Korean-style tacos. Make sticky white rice, ground beef seasoned and cooked in gochujang, soy sauce, and a bit of sesame oil, butter lettuce to use as a tortilla, and garnish the taco with chopped scallions and sesame seeds. She also makes these quick pickled cucumber salad on the side. You get all your macros in and end the day with a smile in your face. By far one of my favorite meals. Give it a try. If need more dets ask. 👍

Italian here. Just to know, 2 out of the 3 Italians recipes from ChatGPT are actually not Italian 😂

I love to hear that you are not tracking your calories but relying on how you feel instead! Listening to the body is such an undervalued art nowadays that should, at least in my opinion, with the age of AI approaching actually be trained and cultivated even more - since this is exactly what makes us as human so special and different from AI, right? It is the one thing machines can not replace for us - feelings and emotions, as well as intuition and gut feeling. I also love your ideas on meal prep! As a very busy student I follow a similar routine and make sure to prep certain dishes for the whole week in advance, so I can each day create a new bowl with different foods, always varying with different sources of protein, carbs, vegetables, etc. Would be nice if you could share your meals more often, they look really great! 😊 Greetings from Austria ⛰️
